Vintage : 2000
Grape varieties : 80 % Syrah, 20 % Grenache, old vines.
Terroir : Selected from the best terroirs in the appellation on the calcareous clay hillsides that form the foothills of the Cévennes, in the municipalities of Gignac and Lagamas. Close to the wine estates of Capion, Daumas-Gassac and Grange des Pères. Low yields - 35 hl/ha. Grape ripeness monitored daily in the run-up to the harvest.
Vinification : Classic maceration, 3 weeks.
Elevage : Vat-aged for 6 months, oak-aged for 9 months.
Alcohol content : 13,5 % by vol.

Tasting notes :
Sustained, enigmatic deep red in colour.
Pleasant, complex nose with vanilla notes, powerful yet subtle.
Opens up deliciously on the palate to reveal complex but harmonious notes of vanilla, liquorice, candied fruits and mocha. The fine, mature tannins and "fat" glycerol provide roundness and length.
Drinking tips :
This top-range wine is an excellent match for typical Languedoc cuisine, venison, barbecued meats and mature cheeses. Ready for drinking from 2003 and will go on improving for at least 5 years.
